Ever wondered if there are artisan chocolate factory in the City?
Mind you, this chocolate doesn’t really cost like your average Ritter Sport and Sneakers so try to give up those for now…
It’s located in the heart of Alserkal Avenue.
Yeah I got you, that place is like a secret warehouse – you don’t know which door will give you a “Voila – Surprise! sensation”.
But this shop, surely you won’t miss. It has Texts written “Chocolate Makers” on the door.
And the chocolate I bought is 52% Dark with Sea Salt. But before that, let’s go back to the shop, Once you enter, you’ll see immediately the entire place converted to a factory & coffee shop, they produce sweets just right in front of your teeth! 🙂
The Mirzam chocolate consists of just three ingredients: cocoa beans, unrefined cane sugar.
This single origin collection is crafted from beans originating from Vietnam, Indonesia, Madagascar, Papua New Guinea and India. All Hand made in Dubai.
How does it work?
Grinding: It’s during this process that other ingredients are added to the chocolate. This part of the process has a very big impact on the flavour notes in the finished chocolate, and deciding exactly how long to conch for is part of the chocolate maker’s skill.
Tempering in Marzam is done manually (by hand).
Moulding: The final step in making a finished chocolate bar is pouring it into a mould then directly to packaging.
Lastly the Packaging.
Once you reached the chocolate section, staffs will help you to choose which one you would like to try and buy. Majority of the chocolates are Dark ones.
Apart from the very beautiful artistic packages, taste is also an award winner!
Five of their chocolate bars (picture above) received awards from the Academy of Chocolate in London.
Four silver awards for the following:
- 65% Single Origin Dark Chocolate India,
- Dark Chocolate with Dates & Fennel,
- Dark Chocolate with Rose,
- White Chocolate with Saffron
And bronze for White Chocolate with Orange Blossom & Roasted Almond.
So! I chose the one that never won huh? Well, there’s a lot of time to try right?
Oh by the way, they have also a very chic coffee shop!
